Pistachio Muffins (They’re Vegan)

1 cup almond milk 2 tsp baking powder
1/4 cup melted coconut oil 1/4 tsp fine sea salt
1/2 tsp baking soda 1/2 tsp cardamon
1/4 cup mashed banana 1 tbsp matcha powder
1 tsp vanilla extract 1/2 cup chopped raw pistachios
3/4 cup sugar 1 1/2 cup all-purpose flour
- Preheat oven to 375 degrees F, and line a 12 muffin pan.
- Mix the wet ingredients together in a bowl.
- Mix the dry ingredients together in a separate bowl.
- Combine all ingredients and mix well.
- Fill each muffin tin 2/3 full, and bake 14-16 minutes or until center is clean when stabbed with a toothpick.
