Candy has played a large role in world history and, in the United States, few candies have had quite the cultural splash as cotton candy is produced by a special spinning machine. The sugar is added, where a heater melts it into syrup.

At the same time that this is happening, the spinning motion of the machine whips the syrup through tiny holes that are perforated across the bowl. This motion cools the syrup instantaneously and fluffs it with air, creating long, extremely thin strands. Cotton candy gets its unique texture when the sugar cools so rapidly.

This delicious treat goes back to Renaissance Italy. Chef learned to melt and spin sugar, pulling it into thin strands using forks and draping it over broom handels. This process was time and labor-intensive, so it was very expensive.
